Brickell Honda Wishes You A Sweet Thanksgiving with this Pumpkin Cake Recipe

Department stores might be setting out the Christmas decorations, but there’s still one more holiday to go before Christmas season truly gets rolling.  Thanksgiving is just around the corner, and while you’re busy buying Christmas gifts, don’t forget to prepare for “Turkey Day.”

 

To help you prepare for the holiday, we’ve found a delicious recipe to share with you.  Are you tired of traditional pumpkin pie?  We know—silly question, but for those looking for something a little different, mix things up this Thanksgiving, and try some Pumpkin Gooey Butter Cakes this time.  Pumpkin is the perfect flavoring for Thanksgiving, and instead of pie, try this delicious cake recipe by Paula Deen.  This recipe has received a number of great reviews, and is a perfect dessert for those with a bit of a sweet tooth.  (Be wary though: some have said it’s a little too sweet, so if you don’t have a sweet tooth, be prepared to reduce the amount of sugar you put in.)

 

Here’s the recipe.  It should take about 1 hour and 20 minutes to prepare (30 minutes prep time and 50 minutes cooking time).  It yields about 6 to 8 servings, and the foodnetwork.com considers it “Easy”—so if you’re no master chef, you can still make sure your guests are more than pleased.

 

Ingredients

 

Cake:

  • 1 (18 1/4-ounce) package yellow cake mix
  • 1 egg
  • 8 tablespoons butter, melted

 

Filling:

  • 1 (8-ounce) package cream cheese, softened
  • 1 (15-ounce) can pumpkin
  • 3 eggs
  • 1 teaspoon vanilla
  • 8 tablespoons butter, melted
  • 1 (16-ounce) box powdered sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

 

Directions

Preheat oven to 350 degrees F.

 

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

 

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

 

Serve with fresh whipped cream.
